Lilly Faye: Hold on. What's a pop-up restaurant?

Mr. Frank: It's like a food truck, only temporary, and with more cachet. You create a special menu and serve it for a limited time, usually just for a night or two, using someone else's kitchen. I plan to start with two seatings.

It's a good way to make money, since it's low overhead, without the cost of payroll or rent. I'm hoping my pop-up will help me build my culinary reputation and attract investors.

Lilly Faye: But what about the legalities, the permits, the health inspection?

Mr. Frank: I'm not worried about it, Doll Face. I'm sure you'll figure it out.
